JAIME PESAQUE
Founder of Jaime Pesaque Restaurants.
A graduate of Le Cordon Bleu and with a Master's degree in Culinary Arts from the Italian Culinary Institute (ICIF), he was born and raised in Peru and trained in Europe at Michelin-starred restaurants in Italy and Spain, including El Celler de Can Roca.
In 2008, with an entrepreneurial spirit and a passion for cooking, he opened his flagship restaurant, Mayta, in Lima. Since its inception, Mayta has been a space dedicated to contemporary Peruvian cuisine, with a focus on local products and cutting-edge culinary techniques.
In 2019, Mayta was included in the list of Latin America's 50 Best Restaurants. In 2022, it was included in The World's 50 Best list, being chosen again in 2023, 2024, and in its latest edition, held in 2025.
It was recognized as the best restaurant in the world by The World Culinary Awards in 2022, and as the best restaurant in Latin America in the 2023 and 2024 editions.
El chef Jaime Pesaque expande su visión culinaria con la creación de diversos conceptos gastronómicos en Lima, como Sapiens, 500 Grados, Callao y Mad Burger. Además, ha llevado la cocina peruana a escenarios internacionales, con presencia en países como Estados Unidos (Nuna) y Países Bajos (Callao).
Throughout his career, Chef Pesaque has represented Peru at various events as a leading figure in Peruvian cuisine. His work has not only transformed the culinary scene in Peru but has also opened doors for Peruvian cuisine on major culinary stages around the world.
